  • 1 red bell pepper diced
  • ¼ cup fresh parsley chopped
  • 2 tablespoons fresh mint chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
