- 1 medium onion diced
- 2 medium carrots diced
- 2 celery stalks diced
- 3 cloves garlic minced
- 1/3 cup all-purpose flour
- 4 cups low-sodium chicken broth
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon dried thyme
- 1 teaspoon salt adjust to taste

- 1 cup heavy cream
Melt the butter in a large pot over medium heat until it foams slightly, about 1 minute.
