- 8 oz fettuccine pasta
- 1 lb boneless skinless chicken breasts
- 1 1/2 tbsp Cajun seasoning divided
- 3 tbsp olive oil divided
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 3 cloves garlic minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 4 green onions sliced
- Salt and black pepper to taste
Boil pasta in salted water until al dente. Drain and reserve 1/2 cup pasta water.
Season chicken pieces with 1 tablespoon Cajun seasoning.
Cook chicken in 2 tablespoons olive oil for 5-7 minutes until browned and cooked through.
Remove chicken and set aside.
In the same pan, add 1 tablespoon olive oil and sauté bell peppers and garlic for 3-4 minutes.
Add heavy cream, chicken broth, and 1/2 teaspoon Cajun seasoning. Simmer for 3-4 minutes.
Return chicken to the pan. Add pasta and toss to combine.
Stir in Parmesan cheese until melted. Add pasta water if needed to thin the sauce.
Season with salt and pepper to taste.
Garnish with green onions and additional Parmesan cheese before serving.
