Ingredients
  

  • 8 oz fettuccine pasta
  • 1 lb boneless skinless chicken breasts
  • 1 1/2 tbsp Cajun seasoning divided
  • 3 tbsp olive oil divided
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 4 green onions sliced
  • Salt and black pepper to taste

Instructions
 

  • Boil pasta in salted water until al dente. Drain and reserve 1/2 cup pasta water.
  • Season chicken pieces with 1 tablespoon Cajun seasoning.
  • Cook chicken in 2 tablespoons olive oil for 5-7 minutes until browned and cooked through.
  • Remove chicken and set aside.
  • In the same pan, add 1 tablespoon olive oil and sauté bell peppers and garlic for 3-4 minutes.
  • Add heavy cream, chicken broth, and 1/2 teaspoon Cajun seasoning. Simmer for 3-4 minutes.
  • Return chicken to the pan. Add pasta and toss to combine.
  • Stir in Parmesan cheese until melted. Add pasta water if needed to thin the sauce.
  • Season with salt and pepper to taste.
  • Garnish with green onions and additional Parmesan cheese before serving.
