  • 3-4 large cucumbers
  • 1/4 medium red onion
  • 1/3 cup white vinegar
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons salt divided
  • 2 tablespoons fresh dill chopped

Instructions
 

  • Wash and slice cucumbers into 1/8-inch thick rounds
  • Toss sliced cucumbers with 1 teaspoon salt and let sit for 15 minutes
  • Slice red onion thinly while cucumbers are draining
  • Whisk together vinegar, sugar, and remaining 1/2 teaspoon salt until dissolved
  • Drain cucumbers and squeeze out excess water
  • Combine drained cucumbers, onion, and fresh dill in a large bowl
  • Pour dressing over vegetables and toss to coat
