Ingredients
  

  • 1 1/2 cups whole wheat pastry flour
  • 1/2 cup rolled oats
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup plain Greek yogurt
  • 1/3 cup honey or maple syrup
  • 1 large egg
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions
 

  • Preheat oven to 375°F and line a muffin tin with paper liners.
  • Whisk flour, oats, baking powder, and salt in a large bowl.
  • Combine yogurt, honey, egg, oil, and vanilla in a separate bowl.
  • Fold the wet ingredients into the dry ingredients until just combined.
  • Gently stir in the blueberries.
  • Fill muffin cups three-quarters full with batter.
  • Bake for 18-22 minutes until a toothpick comes out clean.
  • Cool in the tin for 5 minutes, then move to a wire rack.
