Ingredients
  

  • 3 very ripe bananas about 1 1/2 cups mashed
  • 1/2 cup cottage cheese small curd
  • 1/4 cup butter melted
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions
 

  • Preheat oven to 350°F (175°C) and prepare a 9×5-inch loaf pan
  • Mash bananas in a large bowl
  • Add cottage cheese to mashed bananas and mix well
  • Add melted butter, eggs, vanilla, and sugar to the banana mixture
  • In a separate bowl, combine flour, baking powder, baking soda, cinnamon, and salt
  • Gradually add dry ingredients to wet ingredients, stirring just until combined
  • Pour batter into prepared pan
  • Bake for 55-60 minutes or until a toothpick comes out clean
  • Cool in pan for 10 minutes
  • Transfer to wire rack to cool completely before slicing
