- 1 cup water
- 1/2 cup granulated sugar
- 2 tablespoons kosher salt
- 1 medium onion sliced
- 1 cup sliced beets fresh or canned with juice
- 1 tablespoon mustard seeds
- 1 teaspoon black peppercorns
- 2 bay leaves
- 3 cloves garlic crushed
