Ingredients
  

  • 2 lbs beef chuck roast cubed
  • 1 lb wide egg noodles
  • 1 large yellow onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 2 tbsp vegetable oil
  • 1 tsp dried thyme optional
  • Salt and black pepper to taste

Instructions
 

  • Season beef cubes with salt and pepper.
  • Heat oil in a large pot and brown beef in batches until dark on all sides.
  • Remove beef and sauté onion in the same pot until soft.
  • Add garlic and cook for 1 minute.
  • Deglaze the pot with beef broth and Worcestershire sauce, scraping the bottom.
  • Return beef to the pot, cover, and simmer on low for 90 minutes.
  • Increase heat to medium and stir in egg noodles.
  • Cook noodles for 8-10 minutes until tender.
  • Stir in the cornstarch slurry to thicken the gravy.
  • Adjust seasonings and serve hot.
