- 2 lbs beef chuck roast cubed
- 1 lb wide egg noodles
- 1 large yellow onion chopped
- 3 cloves garlic minced
- 4 cups beef broth
- 1 tbsp Worcestershire sauce
- 2 tbsp cornstarch mixed with 2 tbsp water
- 2 tbsp vegetable oil
- 1 tsp dried thyme optional
- Salt and black pepper to taste
Season beef cubes with salt and pepper.
Heat oil in a large pot and brown beef in batches until dark on all sides.
Remove beef and sauté onion in the same pot until soft.
Add garlic and cook for 1 minute.
Deglaze the pot with beef broth and Worcestershire sauce, scraping the bottom.
Return beef to the pot, cover, and simmer on low for 90 minutes.
Increase heat to medium and stir in egg noodles.
Cook noodles for 8-10 minutes until tender.
Stir in the cornstarch slurry to thicken the gravy.
