Ingredients
  

  • 2 cups fresh pineapple juice
  • 1 cup coconut cream
  • 0.5 cup fresh lime juice
  • 0.25 cup simple syrup
  • 0.5 teaspoon vanilla extract
  • 4 cups ice cubes
  • 2 cups sparkling water or club soda
  • 1 fresh pineapple peeled and sliced for garnish
  • 4 maraschino cherries for garnish
  • 4 lime wheels for garnish
  • Fresh mint leaves for garnish optional

Instructions
 

  • Prepare simple syrup (if making fresh): combine 0.25 cup sugar and 0.25 cup water in a small saucepan over medium heat for 2–3 minutes, stirring until sugar dissolves completely. Let cool to room temperature before using, about 10–15 minutes. Checkpoint: The syrup should be clear and pourable.
  • Gather four tall glasses (12–16 oz capacity) and fill each one halfway with ice cubes. Checkpoint: Ice should be visible at the top of the glass.
  • Pour 0.5 cup fresh pineapple juice into a cocktail shaker (or clean jar with a tight lid), then add 0.25 cup coconut cream slowly while stirring to combine evenly. Checkpoint: The mixture should look creamy and uniform, not separated.
  • Add 0.125 cup fresh lime juice (squeeze from about 1 fresh lime for best flavor) and 1 tablespoon simple syrup to the shaker. Checkpoint: You should smell bright citrus notes.
  • Add a pinch of vanilla extract (about 1/8 teaspoon per glass) to the shaker. Checkpoint: The vanilla should blend smoothly without creating a film on top.
  • Fill the cocktail shaker with ice cubes until it is 2/3 full, then secure the top lid firmly.
  • Shake the shaker vigorously for 10–15 seconds using an up-and-down motion, moving your entire arm. Checkpoint: You should see condensation form on the outside of the shaker and hear a solid shaking sound.
  • Position a fine mesh strainer over the first ice-filled glass and slowly pour the chilled mixture through, stopping at about 1 inch from the rim. Repeat for remaining glasses. Checkpoint: The drink should look creamy and slightly opaque with visible ice floating inside.
  • Pour 0.5 cup sparkling water or club soda slowly into each glass, tilting slightly to minimize overflow from carbonation. Checkpoint: You should see gentle bubbles rising to the surface.
  • Stir each drink gently with a long spoon (cocktail stirrer or bar spoon) for 5–10 seconds to distribute carbonation evenly throughout the drink.
  • Cut fresh pineapple into spears (about 2–3 inches long) and place one into each glass leaning against the rim.
  • Cut fresh limes into thin wheels and place one on the rim or float one in the drink.
  • Top each drink with a maraschino cherry placed on the rim or dropped into the glass.
  • Tear 2–3 fresh mint leaves and slap them gently between your hands to release oils, then place them on top or tuck them between the pineapple spear and glass rim for a fresh herbal appearance.
  • Insert a tall straw (preferably reusable) into each glass at an angle.
  • Serve immediately while chilled and carbonated (carbonation is best within the first 5 minutes). The drink will stay cold for 10–15 minutes before the ice begins melting significantly. Checkpoint: The drink should be frosty cold to the touch and smell strongly of tropical pineapple and coconut with lime brightness.
