Ingredients
  

  • 4 boneless skinless chicken breasts (about 4 cups shredded)
  • 1 can 10.5 oz condensed cream of chicken soup
  • 1 can 10.5 oz condensed cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1 sleeve Ritz crackers crushed (about 45 crackers)
  • 1/4 cup melted butter
  • Seasonings: salt pepper, onion powder, garlic powder

Optional:

  • 1/3 cup chopped scallions
  • 1 cup thawed frozen peas
  • 1/4 cup sliced chives
  • 3/4 tsp garlic powder
  • pinch of cayenne pepper

Instructions
 

Prepare the Chicken Base:

  • Cook chicken thoroughly to 165°F internal temp.
  • Shred or dice the chicken.
  • Season with salt and pepper.

Create the Creamy Sauce:

  • In a large bowl, mix:
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup milk

Optional:

  • chopped scallions, peas, garlic powder, chives, cayenne
  • Assemble the Casserole:
  • Preheat oven to 350°F.
  • Grease a 9×13-inch baking dish.
  • Layer ingredients: Ritz cracker layer → chicken mixture → sauce → top with remaining Ritz crumbs and melted butter.
  • Sprinkle cheese if desired.
  • Bake:
  • Bake for 30–35 minutes, until golden brown and bubbly.
  • Rest and Serve:
  • Let the casserole rest for 5 minutes before serving.
