Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1/2 cup yellow onion finely diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt adjust to taste
  • 16 ounces Velveeta cheese cubed
  • 10 ounces Rotel diced tomatoes with green chilies undrained
  • 1/3 cup milk plus more as needed
  • 1 jalapeño finely diced, optional
  • 1 teaspoon hot sauce optional
  • 1 tablespoon lime juice optional
  • 2 tablespoons chopped cilantro optional

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  • Drain excess grease, then return the beef to the skillet.
  • Add onion and cook until softened. Stir in garlic and cook briefly until fragrant.
  • Stir in chili powder, cumin, black pepper, and salt.
  • Reduce heat to low. Add cubed Velveeta and Rotel. Stir until fully melted and smooth.
  • Stir in milk a little at a time until the dip reaches a thick but scoopable texture.
  • If using, stir in jalapeño, hot sauce, lime juice, and cilantro. Serve warm.
