Meat & Seasoning:
- 15 oz ground beef
- ½ diced onion
- 1 clove garlic minced
- 2 tablespoons taco seasoning
Casserole Base:
- 2 cups Fritos corn chips
- 1 can 15 oz black beans, drained and rinsed
- 2 cups shredded cheddar or Mexican blend cheese
Optional Additions & Variations:
- Ground turkey shredded chicken, plant-based crumbles
- Pinto beans kidney beans, refried beans
- Additional toppings: shredded lettuce diced tomatoes, green onions, sour cream, guacamole, jalapeños, black olives, cilantro
Preheat oven to 350°F (175–180°C).
In a skillet, brown ground beef over medium heat (5–7 min).
Add onions and garlic; cook until softened.
Stir in taco seasoning and cook for another 1–2 min.
Drain excess fat from meat mixture.
In a 9×13 baking dish, layer the casserole:
Bottom layer: Fritos
Middle layer: seasoned meat mixture
Next: black beans
Top: shredded cheese
Bake uncovered for 15 minutes until cheese is melted and bubbly.
Let rest 5–10 minutes.
