Ingredients
  

Meat & Seasoning:

  • 15 oz ground beef
  • ½ diced onion
  • 1 clove garlic minced
  • 2 tablespoons taco seasoning

Casserole Base:

  • 2 cups Fritos corn chips
  • 1 can 15 oz black beans, drained and rinsed
  • 2 cups shredded cheddar or Mexican blend cheese

Optional Additions & Variations:

  • Ground turkey shredded chicken, plant-based crumbles
  • Pinto beans kidney beans, refried beans
  • Additional toppings: shredded lettuce diced tomatoes, green onions, sour cream, guacamole, jalapeños, black olives, cilantro

Instructions
 

  • Preheat oven to 350°F (175–180°C).
  • In a skillet, brown ground beef over medium heat (5–7 min).
  • Add onions and garlic; cook until softened.
  • Stir in taco seasoning and cook for another 1–2 min.
  • Drain excess fat from meat mixture.
  • In a 9×13 baking dish, layer the casserole:
  • Bottom layer: Fritos
  • Middle layer: seasoned meat mixture
  • Next: black beans
  • Top: shredded cheese
  • Bake uncovered for 15 minutes until cheese is melted and bubbly.
  • Let rest 5–10 minutes.
  • Add optional toppings before serving or set up a topping bar.
